Oreo Cheesecake

Ingredients

  • 18 to 20 Oreo cookies
  • 32 oz. cream cheese
  • 1 1/3 c. sugar
  • 1 1/2 t. vanilla
  • 2 t. cornstarch
  • 4 eggs
  • 1/2 c. heavy cream

Directions

  1. Preheat oven to 350F. Butter 8×3 spring form pan.

  2. Trim 1/3 from each of 12 cookies, reserve trimmings, and stand cookies around inside of pan round side up. Cut remaining cookies into fourths.

  3. Beat cream cheese in large bowl on medium speed until smooth.

  4. Gradually beat in sugar, vanilla, and cornstarch, scraping sides of bowl frequently.

  5. Add eggs one at a time beating well after each addition.

  6. Stir in heavy cream

  7. Spoon about 1/2 of mixture into prepared pan. Sprinkle with cookie bits. Pour in remaining batter.

  8. Wrap bottom of pan to catch any leakage. Bake in water bath?

  9. Bake in preheated oven 1 hour. Turn off oven with door closed for 1 more hour.

  10. Remove cheesecake from water bath. Cool completely on a wire rack.
