Spinach Shells

Ingredients

  • 1 10 oz pkg. frozen chopped spinach, cooked and drained
  • 1/2 c. feta cheese, crumbled
  • 1/2 c. cottage cheese, small curd
  • 1 egg white
  • 12 jumbo pasta shells, cooked
  • 1 14 1/2 oz can tomatoes
  • 1/3 c. tomato paste
  • 1 t. dried Italian seasoning
  • 1/2 t. salt
  • 1/4 t. garlic powder
  • 1 c. mozzarella cheese

Directions

  1. Combine first 4 ingredients in a medium bowl; spoon evenly into shells, place in a lightly greased 8-inch baking dish.

  2. Combine tomatoes and next 4 ingredients in a medium saucepan; bring to a boil. Reduce heat and simmer 5 minutes. Pour mixture over stuffed shells.

  3. Bake covered at 350F for 25 minutes.

  4. Uncover, sprinkle with mozzarella chese and bake 10 more minutes until cheese melts.
