Ingredients
- 2 eggs
- 2 tablespoons water
- Salt and pepper, to taste
- 1 1/2 cups seasoned bread crumbs
- 3 tablespoons grated Parmesan cheese
- 2 pounds fillet of sole
- 1/4 cup olive oil
- 1 lemon, cut into wedges
- Tartar sauce (optional)
Directions
- In a bowl, beat the egg, water, and salt, and pepper to taste. In a separate bowl, mix the bread crumbs and Parmesan cheese.
- Rinse the fish and cut it into 4- by 2-inch sticks. Lightly coat the fish with the egg wash, then the bread crumbs.
- Heat the olive oil in a large skillet over medium-high heat. Add the fish and cook until golden, about 3 minutes on each side.
- Remove the fish from the pan and set on a paper-towel-lined dish. Serve with lemon wedges and tartar sauce. Makes 6 servings.
