Crab Stuffed Mushrooms

Ingredients

  • 12 - 14 large fresh mushrooms
  • 2 Tbsp. sliced green onion
  • 3 Tbsp. butter
  • 3 Tbsp. fresh bread crumbs
  • 3 oz. cream cheese, softened
  • 6 oz. crabmeat, flaked
  • salt and pepper, optional

Directions

  1. Remove mushroom stems; chop enough stems to measure 1/3 c. Cook and stir chopped stems and onion in 1 Tbsp. butter until tender. Stir in bread crumbs.

  2. In medium bown, add mushroom mixture to cream cheese; mix until well blended. Gently stir in crab; season to taste with salt and pepper.

  3. Brush mushroom caps with remaining 2 Tbsp. butter, melted. Fill with cream cheese mixture; place in shallow baking pan. Bake at 350 degrees F. for 18 to 20 minutes or until thoroughly heated.
