Cranberry Orange Muffins

Ingredients

  • 2 cups flour (white, wheat, or any combination thereof)
  • 1/2 - 3/4 cup sugar (white or brown, depending on taste desired)
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup orange juice
  • 1 Tbsp grated orange zest
  • equivalent of one egg (I use 1/4 cup fat-free egg substitute)
  • 2 Tbsp nonfat yogurt, OR 2 Tbsp applesauce
  • 6 oz. fresh cranberries (chopped), OR 1 cup dried cranberries

Directions

  1. Mix dry ingredients in med-large bowl.
  2. Mix wet ingredients separately.
  3. Combine both groups, then add in fruit.
  4. Bake in LIGHTLY greased muffin pan at 375 degrees for 20 minutes, or till firm to touch and light brown on top.
