Frosty Strawberry Squares

Ingredients

  • 1 c flour
  • 1/4 c brown sugar
  • 1/2 c chopped walnuts
  • 1/2 c butter melted
  • 2 egg whites
  • 3/4 c granulated sugar
  • 1 (10 oz) frozen strawberries or 2 c fresh strawberries
  • 2 T lemon juice
  • 1 c whipping cream, whipped or 1 container frozen whipped topping

Directions

  1. In a bowl, stir together flour, brown sugar, walnuts and butter.

  2. Spread evenly in a 13 by 9 by 2 inch baking pan.

  3. Bake at 350 degrees for 20 minutes, stirring occasionally. Remove from oven. Cool. Sprinkle 2/3 of baked mixture in bottom of the same pan. Reserve remaining crumb mixture.

  4. In a large bowl, combine egg white, sugar, berries and lemon juice.

  5. Beat a low speed with an electric mixer until mixture begins to thicken, about 2 minutes.

  6. Then beat at high speed until stiff peaks form (10-12 minutes).

  7. Fold in whipped cream or whipped topping. Spoon over crumb mixture in pan.

  8. Top with reserved crumbs.

  9. Freeze six hours or overnight.

  10. Cut into squares. Serve frozen.
