Ingredients
- 3 cups coarsely grated zuchinni
- 1/2 teaspoon salt
- 1 cup breadcrumbs
- 1 egg
- 2 green onions
- 1/4 cup diced red bell pepper
- 1 1/2 teaspoon Old Bay seasoning
- 1 teaspoon Dijon mustard
- 1 tablespoon mayonaise
- 1/8 teaspoon red pepper flakes
- 2 tablespoons vegetable oil
- 1 teaspoon butter
Directions

Place grated zucchini in a colander.

Sprinkle lightly with salt and let stand 30 minutes.

Press with paper towel to remove as much liquid as possible. (Reduces to about 2 cups)

Mix zucchini and rest of ingredients (except oil and butter).

Form into patties.

Chill.

Place on a baking sheet.

Brush with oil and butter.

Bake at 450 until brown.
