Zucchini Cakes

Serves 4 people

Ingredients

  • 3 cups coarsely grated zuchinni
  • 1/2 teaspoon salt
  • 1 cup breadcrumbs
  • 1 egg
  • 2 green onions
  • 1/4 cup diced red bell pepper
  • 1 1/2 teaspoon Old Bay seasoning
  • 1 teaspoon Dijon mustard
  • 1 tablespoon mayonaise
  • 1/8 teaspoon red pepper flakes
  • 2 tablespoons vegetable oil
  • 1 teaspoon butter

Directions

  1. Place grated zucchini in a colander.

  2. Sprinkle lightly with salt and let stand 30 minutes.

  3. Press with paper towel to remove as much liquid as possible. (Reduces to about 2 cups)

  4. Mix zucchini and rest of ingredients (except oil and butter).

  5. Form into patties.

  6. Chill.

  7. Place on a baking sheet.

  8. Brush with oil and butter.

  9. Bake at 450 until brown.
