Lemon Bars

Ingredients

  • 1 cup all-purpose flour
  • 1/8 teaspoon salt
  • 1/2 cup confectioner's sugar
  • 1 stick butter, melted
  • 2 large eggs
  • 3/4 cup sugar
  • 1 1/2 tablespoons all-purpose flour
  • 6 tablespoons lemon juice
  • 2 teaspoons finely grated lemon zest

Directions

  1. Adjust oven rack to lower-middle position.

  2. eheat oven to 325.

  3. Spray an 8 × 8 baking pan with cooking spray.

  4. Fit a piece of tin foil on the bottom of the pan and up two sides.

  5. Spray foil with cooking spray.

  6. Mix flour, salt, confectioner’s sugar in a medium bowl.

  7. Stir in butter to form dough.

  8. Press dough into pan bottom.

  9. Bake until pale golden, about 20 minutes.

  10. Whisk eggs, sugar, flour, lemon juice and zest in a medium bowl.

  11. Pour lemon mixture into baking pan.

  12. Cook for about 20 minutes. Until it is set.

  13. Let cool.
