Glazed Lemon Bars

Ingredients

  • 1 cup reduced fat Bisquick
  • 2 T powdered sugar
  • 2 T firm butter
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 T reduced fat Bisquick
  • 2 t grated lemon peel
  • 2 T lemon juice
  • 3/4 cup powdered sugar
  • 1T 1 1/2 t lemon juice

Directions

  1. Heat oven to 350

  2. Mix 1 cup Bisquick and 2 T powdered sugar in small bowl

  3. Cut in butter until mixture looks like fine crumbs

  4. Press mixture in bottom and 1/2 inch up edges of ungreased square pan 8 × 8 × 2 inches.

  5. Bake about 10 min or until light brown

  6. Mix granulated sugar, eggs, Bisquick, lemon peel and 2 T lemon juice

  7. Pour over baked layer

  8. Bake about 25 min or until set and golden brown

  9. While warm, loosen edges from sides of pan

  10. Mix powdered sugar and lemon juice until smooth
  11. Spread with lemon glaze

  12. Cool completely, about 1 hour

  13. For bars cut into 6 rows by 4 rows
