Pancakes

Add blueberries if desired.

Serves 5 people

Ingredients

  • 2 c. flour
  • 2 heaping Tbsp. baking powder
  • 3 Tbsp. sugar
  • 1 tsp. salt
  • 2 eggs
  • 1-3/4 c. milk (regular or buttermilk)
  • 1/4 c. melted butter
  • blueberries, if desired

Directions

  1. Mix dry ingredients.

  2. Beat eggs in Kitchenaide mixer until fluffy. Add milk and continue to beat until fluffier.

  3. Beat in dry ingredients 1/4 c. at a time, beating well after each addition.

  4. Gently mix in melted butter.

  5. Heat pan and lightly coat with Crisco (or similar product)l. Add batter in pan to desired size. If using, place a few blueberries into pancake. When it begins to bubble in the center, turn and brown on second side.

  6. Keep cooked pancakes warm in oven until all are cooked. Serve.
