Ingredients
- 1 pound whole wheat spaghetti
- 2 tablespoons sesame oil
- 2/3 cup peanut butter
- 1/3 cup low-sodium soy sauce
- 2 tablespoons water
- 1-2 tablespoons broth/red wine vinegar
- 3 tablespoons brown sugar
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger (1 teaspoon ground)
- 1/2 teaspoon red pepper flakes
- 2 carrots, shredded
- 1 cucumber, diced
- 1/2 peanuts, chopped
- 2 green onions to garnish
Directions

Cook noodles to desired consistency, transfer to strainer and rinse with cold water.

Toss with sesame oil and set aside.

Whisk together sauce ingredients in a large bowl.

Add spaghetti to sauce and toss.

Add cucumber and carrots to pasta and toss.

Top with chopped peanuts.
