Cold Peanut Noodles

Ingredients

  • 1 pound whole wheat spaghetti
  • 2 tablespoons sesame oil
  • 2/3 cup peanut butter
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons water
  • 1-2 tablespoons broth/red wine vinegar
  • 3 tablespoons brown sugar
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger (1 teaspoon ground)
  • 1/2 teaspoon red pepper flakes
  • 2 carrots, shredded
  • 1 cucumber, diced
  • 1/2 peanuts, chopped
  • 2 green onions to garnish

Directions

  1. Cook noodles to desired consistency, transfer to strainer and rinse with cold water.

  2. Toss with sesame oil and set aside.

  3. Whisk together sauce ingredients in a large bowl.

  4. Add spaghetti to sauce and toss.

  5. Add cucumber and carrots to pasta and toss.

  6. Top with chopped peanuts.
