Lemon Mint Ice Cubes
(from largomason’s recipe box)
Please note, I chopped the mint very finely, but if you don’t care for the mint pieces in your drink (they don’t bother me at all), pour the mixture through a fine mesh strainer before filling ice cube trays.
Ingredients
- 1 1/2 cups packed fresh mint leaves (~ 1.1 oz)
- 2 1/2 tablespoon fresh lemon juice (juice from 1 lemon)
- 4 cups water
Directions
- In a blender or food processor combine mint, lemon juice, and a small amount of the water until mint is finely chopped.
- Add mixture to the remaining water, mix well, pour in ice cube trays, and freeze.
- Once frozen, store ice cubes in zip top plastic bag in freezer until ready to use.
