Ingredients
- cooked rotisserie chicken
- 1/2 c. sliced carrots
- 1/2 c. sliced celery
- 1/2 c. sliced mushrooms
- 1/2 c. diced onion
- 2 cloves garlic, minced
- 8 c. chicken broth
- 1 pk. uncle bens long grain and wild ready rice
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 3/4 c. flour
- 1/2 c. butter plus 2Tbs.
- 2 c. heavy cream
Directions

Remove skin from chicken. Remove meat from bones and shred. Set aside.

In large pot, cook vegetables and garlic in 2 Tbs. butter until tender.

Add chicken, rice, and chicken broth.

Bring to a boil. Cover and remove from heat.

In a bowl, combine flour, salt, and pepper.

In a small sauce pan, melt butter.

Slowly whisk in flour mixture until a smooth paste forms.

Slowly whisk in cream until bubbly and very smooth.

Whisk cream mixture into broth mixture and heat on medium until hot and bubbly.
