Chicken, Apple, and Chutney Sandwich

Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup mango chutney, chopped
  • 1/4 teaspoon curry powder
  • 8 slices cracked wheat bread
  • 2 boneless skinless chicken breast halves, cooked, seasoned, and sliced (about 1 lb)
  • 1 granny smith apple, unpeeled and thinly sliced
  • sharp cheddar cheese, sliced to fit the bread
  • 1 large spinach leaves (4) or 1 large lettuce leaf (4)

Directions

  1. In a small bowl, mix together the mayonnaise, chutney, and curry powder; spread the mixture on each slice of bread.

  2. Divide the chicken, apple slices, cheese, and spinach equally among 4 slices of bread.
  3. Top with remaining bread slices; cut in half to serve.
