Cheesy Mac and Cheese

Ingredients

  • Sauce:
  • 1/2 stick (1/4 cup) unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups warm whole milk
  • Kosher salt and freshly ground black pepper
  • Macaroni Noodles
  • Handful of different cheeses (eye it)

Directions

  1. Preheat the oven to 400 degrees F. Spray a 13 by 9-inch baking dish with cooking spray.

  2. For the sauce:

  3. In a 2-quart saucepan, melt the butter over medium heat.
  4. Add the flour and whisk until smooth.

  5. Gradually add the warm milk, whisking constantly to prevent lumps.

  6. Simmer over medium heat, whisking constantly, until the sauce is thick and smooth, about 8 minutes (do not allow the mixture to boil).
  7. Remove from the heat and season with salt and pepper, to taste.

  8. Pour the sauce and mix into the noodles.

  9. Add the cheeses.

  10. Put into baking dish.

  11. Sprinkle top with cheese and bread crumbs.

  12. Bake for 20-25 minutes
