Grouper with Pan-Roasted Tomatoes

Ingredients
- 2 tsp paprika
- 1 TBSP olive oil, divided
- 1 tsp pepper
- 1/4 tsp salt
- 4 (6oz) grouper or other white fish fillets
- 2 garlic cloves, minced
- 1/2 tsp crushed red pepper
- 1 c grape or cherry tomatoes, halved
- 2 TBSP lemon juice
- 1 tsp olive oil
- 1/4 c chopped parsley
Directions

combine paprika, 2 tsp oil, pepper and salt in a small bowl

rub paprika mixture on both sides of fillet – set aside

heat a large nonstick skillet over med.-high heat; coat pan with cooking spray.

Add fish, and cook 4 min. on each side or until fish flakes from pan – keep warm

place remaining 1 tsp oil in pan over med. heat.

Add garlic and crushed red pepper

saute until tender

Add tomatoes and lemon juice

cook 2 min or until mixture is hot and tomatoes begin to burst

spoon tomato mixture over fish and sprinkle with parsley
