Blackened Salmon with blue cheese sauce

Ingredients
- 1 TBSP Italian seasoning
- 1 tsp cracked black pepper
- 2 TBSP paprika
- 2 TBSP salt
- 1 1/2 TBSP cayenne pepper
- 2 TBSP butter
- 1 TBSP grapeseed oil, for frying
- 4 (6oz) portions skinless and boneless salmon fillets
- blue cheese sauce:
- 1/2 c white wine
- 1/2 c heavy cream
- 3/4 c blue cheese crumbles

in small bowl, combine italian seasoning, pepper, paprika, salt, cayenne

season each piece of fish with rub

heat large skillet over med-high heat and add butter and oil – melt

add fish adn cook 2 min. per side

transfer pan to over 4-6 min.

sauce:
-
place white wine into med. sauce pan adn reduce by half.

add heavy cream and allow to reduce

add blue cheese and whisk smooth

serve sauce on top of salmon
