Ingredients
- 4 c. cubed butternut squash
- 2 wedges laughing cow cheese - room temp.
- 3/4 c diced onions
- 1/4 c FF egg substitute
- 1/2 tsp salt
- 1/4 tsp chili powder
- 1/8 tsp pepper
Directions

350 deg

place squash in large microwave safe bowl with 1/4 c of water

cover and microwave for 6 min.

once cool enough to handle, uncover and drain water – set aside

place onions in a small microwave safe dish with 2 TBSP water

cover and microwave for 3 min.

Once cool enough to handle, uncover and drain any excess water – set aside

place squash and all other ingredients except for the onions in a blender

pulse until thouroughly mixed (but not liquified)

remove blender from base and stir in onions

transfer squash mixture to a small casserole dish sprayed with nonstick spray

place in over and bake 34-40 min. (until edges brown)

serve with a spoon as you would mashed potatoes
