Cheesy Butternut Bake

Ingredients

  • 4 c. cubed butternut squash
  • 2 wedges laughing cow cheese - room temp.
  • 3/4 c diced onions
  • 1/4 c FF egg substitute
  • 1/2 tsp salt
  • 1/4 tsp chili powder
  • 1/8 tsp pepper

Directions

  1. 350 deg

  2. place squash in large microwave safe bowl with 1/4 c of water

  3. cover and microwave for 6 min.

  4. once cool enough to handle, uncover and drain water – set aside

  5. place onions in a small microwave safe dish with 2 TBSP water

  6. cover and microwave for 3 min.

  7. Once cool enough to handle, uncover and drain any excess water – set aside

  8. place squash and all other ingredients except for the onions in a blender

  9. pulse until thouroughly mixed (but not liquified)

  10. remove blender from base and stir in onions

  11. transfer squash mixture to a small casserole dish sprayed with nonstick spray

  12. place in over and bake 34-40 min. (until edges brown)

  13. serve with a spoon as you would mashed potatoes
