Mashed Potatoes with roasted garlic

- 1 1/2 lb baking potatoes
- 7 garlic cloves, peeled
- 1/3 c LF milk
- 2 TBSP butter
- 1/2 tsp salt
- 1/4 tsp pepper
- chopped chives

preheat 425 deg

pierce potatoes several times with fork.

wrap garlic in foil

place potatoes and garlic on baking sheet; bake until potatoes pierce easily with fork and garlic is softened – about 45 min. – let cool until easy to handle, about 10 min.

using a knife, slit potatoes open; with a spoon, scoop out pulp and place in med. bowl

in small saucepan, mash garlic; add milk, butter, salt and pepper

cook over low heat, stirring, until heated

pour hot milk mixture over potatoes; mash together until smooth

sprinkle with chives
