Chocolate Peanut Butter Whoopie pies

Ingredients

  • 1 12oz pkg miniature semisweet chocolate pieces
  • 2 TBSP milk
  • 3/4 c butter- softened
  • 1/4 c creamy peanut butter
  • 1 1/2 c sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 eggs
  • 1/2 c milk
  • 1 tsp vanilla
  • 1/2 c unsweetened cocoa powder
  • 3 c flour
  • 1 recipe filling:
  • 1 c butter - softened
  • 1 c peanut butter
  • 1 c marshmellow creme
  • 2 c powdered sugar
  • 2 TBSP milk

Directions

  1. Preheat over 350 deg.

  2. set aside 1/4 c chocolate pieces to sprinkle on top

  3. in a microwave safe bowl- 1 c chocolate pieces and 2 TBSP milk – microwave on 50% power for 1 minute or until melted- stir once – set aside

  4. in bowl beat butter and peanut butter with electric mixture until combined

  5. add sugar, soda, baking powder and 1/2 tsp a salt – beat to combine

  6. add eggs, 1/2 c milk, vanilla, and melted chocolate – beat until combined

  7. stir in remaining chocolate pieces

  8. drop by rounded tsp 2 inch apart onto ungreased cookie sheet

  9. sprinkle with reserved chocolate

  10. bake 9 minutes or until tops are set

  11. cool on sheets – 1 min

  12. transfer to wire rack – cool completely

  13. Make filling: in bowl beat 1 c softened butter, 1 c peanut butter, 1 c marshmallow creme and 2 c powdered sugar with electric mixer until combined

  14. IF NEEDED beat in 2 TBSP milk until spreading consisitency

  15. to assemble: spread flat sides of half the cookies with filling, top with remaining cookies
