Ingredients
- 2 pkgs. ladyfingers (3 pkgs. of small)
- 1 cup Italian espresso (already made, with sugar to taste)
- 400 gram mascarpone (found in Italian specialty stores)
- 4 eggs
- 1/2 cup sugar
- 6 tbsp. rum (optional)
- Cocoa (to sprinkle on top)

Take mascarpone and put egg yolks, sugar and 2 tablespoons rum; mix together. Blend thoroughly using electric mixer for 1 minute. Take 4 egg whites and beat until it is firm (like snow). Mix mascarpone mixture and egg white mixture together by hand with wooden spoon until all is one color (yellow) and no white streaks remain.

Lay one layer of ladyfingers on bottom of 13×9 inch dish. With spoon, sprinkle espresso on top of ladyfingers. After you soak, take mascarpone mixture, and with wooden spoon, cover with ladyfingers. Spread until flat. Finish with another layer of ladyfingers, espresso coffee and mascarpone mixture. Sprinkle cocoa all over top to cover.
