Ingredients
- 2 tbsp. olive oil (or salad oil)
- 1 clove garlic, crushed
- 1 tsp. chopped parsley
- 1 to 1.5 lb. raw shrimp, shelled and deveined
- Dash of cayenne
- 1/3 cup dry white wine
- 1 medium tomato, peeled and chopped
- 1 tsp. salt
- Dash of pepper
Directions

Slowly heat oil in large, heavy skillet. Add garlic; saute until golden.

Add parsley, shrimp and cayenne; cook, stirring frequently for 3 minutes.

Add wine; cook, covered for 3 minutes

Add tomato, salt and pepper; cook, covered for 10 minutes

Serve hot over rice.
