Kentucky-Style Oven Barbecued Chicken

Ingredients

  • 1/4 cup butter or 1/4 cup margarine
  • 3 1/2 lbs chicken pieces
  • 1/2 cup white vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon cayenne pepper
  • hot cooked rice

Directions

  1. Melt butter in a large nonstick skillet over medium heat; add chicken and brown on all sides.

  2. Remove from skillet, reserving drippings.

  3. Place chicken in an 11×7 inch baking dish.

  4. Add vinegar and next 5 ingredients to reserved drippings in skillet, stirring to loosen browned particles that cling to bottom.

  5. Pour over chicken.

  6. Cover and bake chicken at 325 degrees for 45 minutes; uncover and bake 15 minutes more.

  7. Serve over rice.
