Ingredients
- 1 1/2 cup flour
- 2 tsp baking powder
- 2 tbls butter, melted
- 2 large eggs
- 1/2 cup plus 2 tbls milk
- 1/2 cup of finely chopped cooked ham (optional)
- 1 1/2 cups grated zucchini
- 2 cups fresh corn kernals
- salt and pepper to taste
- corn oil for frying
Directions

Whisk together flour, baking powder, salt and pepper in a large bowl.

In a separate bowl, stir together butter, eggs and milk.

Stir the dry and wet ingredients together until just combined.

Add ham, zucchini and corn, stir until blended.

Working in batches of 3 or 4, gently drop 2 tbsp of batter into the skillet for each fritter, pressing gently with a spatula to flatten. Cook turning once, approx 2 minutes

Transfer with a spatula or slotted spoon to a paper towel.

Season with more salt and pepper to taste.

Serve with wedges of lime.
