Spinach Souffle

Ingredients

  • 1 lb spinach
  • 2 c ricotta
  • 2 eggs
  • 1 c grated parmesan
  • 3 T olive oil
  • 1 garlic clove
  • 1/2 c bread crumbs
  • salt
  • pepper

Directions

  1. Boil spinach, drain, mince

  2. Saute in pan with olive oil and garlic

  3. Remove from pan, place in bowl with ricotta, 2 yolks, parmesan, salt and pepper.

  4. Whip two egg whites in a separate bowl, then mix them with other mixture.

  5. Pour into a oiled, breaded baking pan and flatten with a wooden spoon.

  6. Bake at 430°F for 30 mins.
