Ingredients
- 1 lb spinach
- 2 c ricotta
- 2 eggs
- 1 c grated parmesan
- 3 T olive oil
- 1 garlic clove
- 1/2 c bread crumbs
- salt
- pepper
Directions

Boil spinach, drain, mince

Saute in pan with olive oil and garlic

Remove from pan, place in bowl with ricotta, 2 yolks, parmesan, salt and pepper.

Whip two egg whites in a separate bowl, then mix them with other mixture.

Pour into a oiled, breaded baking pan and flatten with a wooden spoon.

Bake at 430°F for 30 mins.
