Grilled Vegetable Stacks

Ingredients
- 1 Large Zucchini
- 1 Large Eggplant
- 1/2-3/4 cup fresh Ricotta
- Chopped Spinach to taste
- Freshly grated Parmesan and Romano
- 1 egg
- Garlic powder to taste
- Chopped FRESH tomatoes
Directions

Slice veggies lengthwise and grill

Mix Ricotta, egg, spinach, garlic and cheeses in a bowl

place a layer of eggplant in a roasting pan

Spread a thin layer of the cheese mixture on each sliced

Top with a layer of zucchini

Spread another layer of the cheese mixture
-
Sprinkle with chopped tomatoes and some parmesan

Bake in a 350 degree oven until browned
