food not bombs cornbread

these are mmm, mmm, good.

for a good time, add a can of corn (drained) and some chopped jalapenos. makes a bunch, especially if you triple it.

Prep time: 5 minutes
Cook time: 25 minutes

Ingredients

  • 1 c. cornmeal
  • 1 c. flour
  • 4 tsp. baking powder
  • 0.25 c. sugar
  • 1 tsp salt
  • 1 Tbsp. egg replacer (optional)
  • 1 c. soy milk (or water)
  • 0.5 c. applesauce (important!)

Directions

  1. preheat oven to 450 degrees (F).

  2. mix everything.

  3. pour into pan, and cook for 20-25 minutes. or, pour into muffin tins – adjust cooking time accordingly (10-15 minutes, depending on the muffin pan).
