Crispy Cheese with Strawberry Salad

Ingredients

  • 6 oz halloumi cheese
  • 5 T EVOO
  • 2 c strawberry slices
  • 5 oz baby arugula
  • 2 T balsamic vinager
  • salt
  • pepper

Directions

  1. Cut cheese into 1/2 inch-thick triangles. Heat 1 T EVOO in small pan over medium heat. Brown the cheese on one side.

  2. Toss berries and arugula with 4 T EVOO and vinegar. Season with salt and pepper. Top with cheese.
