Lemon Chicken and Couscous Loaf

Ingredients

  • 1 1/2 lbs ground chicken
  • 1 cup cooked couscous (cooked according to package directions)
  • 1 cup firm fresh white breadcrumbs
  • 1 cup chopped scallion
  • 1 (9 ounce) package frozen chopped spinach, thawed and squeezed of excess water
  • 1 tablespoon grated lemon peel
  • 1/3 cup chopped fresh mint
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon cayenne
  • 1 egg

Directions

  1. Preheat the oven to 350°; in a large bowl, combine all the ingredients, using your hands.

  2. Pat the mixture into a 9×5 inch loaf pan, smoothing the top.

  3. Bake about 1 hour or until the loaf is firm and the top is browned.

  4. Let the meatloaf stand in the pan for 10 minutes before slicing to serve.
