Tortellini with Roasted Cauliflower and Tomatoes

Ingredients
- 4 cup cauliflower
- 4 cloves garlic
- 2 cup cherry tomatoes
- 1 tbsp melted butter
- 1 package of tortellini
- 2 tbsp flour
- 1/2 tsp dried thyme or basil
- 2 cup milk
- parmesan
Directions

preheat oven to 450F

toss cauliflower, tomatoes, garlic and butter evenly on a baking sheet and roast for 20 mins, stirring twice

cook tortellini and drain

whisk flour, thyme and 1/4 tsp each salt and pepper into the milk; pour into pasta pot and bring to a boil over medium heat, whisking constantly

reduce heat and cook for 3 minutes; remove from heat and stir in remaining vegetables

add to top of tortellini and sprinkle with parmesan
