Foil Dinners

My sister loves foil dinners and they are so easy. They are a great staple to keep around for the summer as they can be made on the grill and you don’t have to heat your house up with the oven.

Ingredients
- 1/2 pound reduced fat smoked turkey sausage, sliced
- 1/2 medium green bell pepper, cubed
- 1 can whole kernel corn, drained
- 2 teaspoons Cajun or Creole seasoning, divided
- 1 can diced tomatoes with green pepper and onions, drained
Directions

Preheat oven to 450°F or grill to medium-high.

Place sausage, green pepper and corn on sheet of aluminum foil; sprinkle with 1 teaspoon Cajun seasoning. Spoon tomatoes over top of ingredients; sprinkle with remaining seasoning.

Fold foil up and seal into packets.

Bake 20 to 25 minutes on a cookie sheet in oven OR grill 10 to 12 minutes in covered grill.
