Baked Shrimp in Chipotle Sauce

Ingredients
- 1/2 stick butter
- 1/4 cup dry red wine
- 1 1/2 tbs worcestershire sauce
- 1-2 chipotle chiles in adobo sauce, minced, plus 2-3 tsp of the adobo sauce
- 2 large garlic cloves, minced
- 1/2 tsp salt
- 1 1/2 lb medium shrimp in shell

Preheat oven to 400

Melt butter in a saucepan over medium heat. Stir in all ingredients except shrimp. Toss shrimp and sauce together in 2-3 qt. shallow glass or ceramic baking dish. Bake until shrimp are just cooked through, approximately 10 minutes.

Serve with crusty french bread, peel and eat!

For a variation, combine the wine, worcestershire, chipotles and adobo, garlic and salt, mix in the shrimp and bake as noted above. When shrimp is cooked through, remove shrimp from wine sauce, pour wine sauce in small sauce pan and heat over low heat. Add cold butter at this point, stirring constantly, until all incorporated and melted, then pour over the shrimp and serve.
