Chicken Zucchini Saute

One can use either cherry or grape tomatoes. This dish is meant to be served over cooked rice and served with a side green salad and crusty bread.

Ingredients
- 2 cloves garlic, finely chopped
- 1 bunch scallions, chopped
- 1/2 medium green zucchini, peeled, halved and sliced
- 1/2 medium yellow zucchini, peeled, halved and sliced
- 1/2 red bell pepper, thinly sliced
- 1/2 yellow bell pepper, thinly sliced
- Handful of cherry tomatoes, halved
- 2 skinless, boneless chicken breasts, sliced thin and halved
- Mrs. Dash and Lawry's Seasoned Lemon Pepper
- cannola oil
Directions

Saute garlic and onions in 2 Tbs oil until onions clear.

Add peppers and continue saute until peppers slightly softened.

Add both zucchini squashes and saute until softened.

Remove vegetable medley from pan to covered warming plate.

Add 2 Tbs oil to pan and saute chicken strips thoroughly, seasoning with Mrs. Dash and Lawry’s Seasoned Lemon Pepper to taste.

Return vegetable medley to pan and heat through.

Top with tomatoes and toss.
