Louisiana Red Beans and Rice

Ingredients

  • 4 (16 ounce) cans kidney beans, rinsed and drained
  • 1 (14 1/2 ounce) can diced tomatoes
  • 1 (14 ounce) package smoked turkey sausage, sliced
  • 1 cup chicken broth
  • 3 celery ribs, chopped
  • 1 large onion, chopped
  • 1 medium green bell pepper, chopped
  • 1 small red bell pepper, chopped
  • 6 garlic cloves, minced
  • 1 bay leaf
  • 1/2 teaspoon crushed red pepper flakes (or more to taste)
  • 2 green onions, chopped
  • hot cooked rice

Directions

  1. In a 4-quart slow cooker, combine the first 11 ingredients.

  2. Cover and cook on LOW for 8-10 hours or until heated through.

  3. Stir before serving; discard bay leaf.

  4. Sprinkle each serving with onions, serve with rice.
