Morning Cookies

This is a mild flavored, soft cookie that makes a wonderful breakfast. They freeze well. You can also spread the bottom with peanut butter or cream cheese and add a second cookie to make it into a cookie sandwich! Just grab one and go.

Ingredients
- 1/4 cup butter (or replacement margarine)
- 1/2 cup packed brown sugar
- 3/4 cup Janelle's gluten free all purpose flour
- 1 teaspoon xanthan gum
- 1 cup gluten free rolled oats (Bob's Red Mill)
- (optional ingredient: 1/4 cup dry milk powder)
- 1 egg white (or replace with flax or other)
- 3/4 cup applesauce
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon cloves
- 1/2 teaspoon cinnamon
- 1 cup chopped pecans (or half nuts and half raisins or craisins)
Directions

Preheat oven to 375 degrees. Place parchment paper on baking sheet.

In a large mixing bowl beat butter and brown sugar with electric mixer until creamy and smooth.

Add remaining ingredients except nuts, beat on low speed just until combined. Do not overmix.

Stir in nuts.

Drop rounded tablespoons of dough 2 inches apart on prepared baking sheet. Flatten dough so each cookie is about 2 inches across.

Bake 10 minutes or until lightly browned and set. Cool partially before removing from pan.
