Ingredients
- 1/2 lb ground beef
- 1 chopped onion
- 1 clove garlic
- 2 cups mashed cooked kidney beans
- 1 1/4 cups canned tomato paste
- 2 cups water
- 2 tsp dried basil
- 1 tsp ground thyme
- 1/2 tsp ground oregano
- 2 cups 1% cottage cheese
- 1 lightly beaten egg
- 12 oven ready lasagna noodles
- 2 cups shredded mozzarella
- 1/2 cup parmesan cheese
Directions

in a large pan over medium heat cook beef, onions and garlic until cooked

stir in mashed beans, tomato paste, water, basil, thyme, oregano and bring to boil; let simmer for 15 minutes, add some salt and pepper

in a small bowl combine cottage cheese and egg mix

spread 3/4 cup of the remaining sauce over bottom of 13×9 inch baking dish. arrange a layer of 4 noddle and spread remaining sauce over noodles then half the cottage cheese then half the mozzarella and cover with a second layer of 4 noodles

repeat and top with remaining noodles; cover completely with reserved sauce and sprinkle with parmesan cheese

bake in 350F for 40 minutes
