Caribbean Jerk Tempeh

Ingredients

  • 1 cup apple juice
  • 2 tbsp onion powder
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 jalapeno, minced
  • 2 tbsp white vinegar
  • 1 tbsp olive oil
  • 1 tbsp fresh ginger, grated or minced
  • 1/2 tsp allspice
  • 1/2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp pepper
  • 1/4 tsp thyme
  • 1 package tempeh, steamed
  • 5 scallions (green onions), sliced

Directions

  1. Whisk or blend together all the ingredients excpet tempeh and scallions thoroughly.

  2. Slice the tempeh into 2 × 1 inch strips and place in a baking pan. Pour the spice mixture over the tempeh and coat thoroughly. Allow to marinate overnight.

  3. Heat oven to a broil, or to the highest temperature.

  4. Cook for 4 to 6 minutes, turn, then cook for another 4 to 6 minutes. Top with scallions before serving.
