Ingredients
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 6 Tbs butter
- 1/2 cup cheddar cheese, grated
- 6-8 thin scallions, white and tender green part sliced thin
- 1/3 cup milk
- 1/3 cup buttermilk
- Extra milk or melted butter
Directions

Heat the oven to 400 degrees F and line a baking sheet with parchment paper.

In a medium bowl, combine flour, baking powder, baking soda, and salt, whisk to combine. Cut the butter into small cubes and add it to the flour. With a pastry blender, cut the butter into the dry ingredients until the mixture resembles crumbs. Add the cheddar cheese and scallion, and stir to distribute. Add the milk and buttermilk and stir to combine. (Add extra milk 1 Tbs at a time if needed).

Flour a cutting board lightly. Remove the dough from the bowl, put it on your floured surface, and pat it into a rough square about 8 inches across. GENTLY knead the dough just one or two turns.

If needed, dust your work surface with flour again. Pat the dough to a ¾ inch thickness. Using a biscuit cutter, cut circles from the dough. Place the biscuits onto the parchment lined sheet. Gently press the scraps together and cut into last biscuits.

Brush the tops of the biscuits with milk or melted butter, if desired, and bake at 400F for 10 minutes, and lower the heat to 375F for 8-10 more minutes or until lightly browned, about 20 minutes.
