Ingredients
- 1 tablespoon vegetable oil
- 2 cups chopped cabbage
- 1 cup chopped onion
- 3 cups water
- 3 cups vegetable broth
- 1 (6 ounce) can tomato paste
- 1 cup sliced celery
- 1 cup sliced zucchini
- 1 cup sliced carrot
- 1 cup diced peeled boiling potato
- 1/2 cup frozen lima beans
- 1/2 cup cut green beans (fresh or frozen)
- 1/2 teaspoon dried thyme
- 1/4 teaspoon salt (to taste)
- 1/3 teaspoon pepper
Directions

In a 4-quart pot, heat the oil over med-high heat; add in cabbage and onions; cook, stirring, until softened, about 4 minutes.

Stir in the water, vegetable broth, and tomato paste until combined.

Add the remaining ingredients; bring to a boil; reduce heat and simmer, uncovered, 30 minutes.

*May use corn instead of lima beans.
