Cucumber Tapas

(from beachy’s recipe box)

Ingredients

  • 2 cucumbers, peeled & sliced 1/8"
  • 2 tomatoes, cut into 8 wedges each
  • 1/2 medium onion, (red) sliced thin
  • 1 t. salt
  • 2-3 T. sherry vinegar
  • 6-7 T. olive oil
  • Black pepper

Directions

  1. Mix altogether

  2. Let sit for 15 minutes

  3. Use sauce as dipping sauce with tapas.

  4. Optional top with sunflower seeds.
