- 2 cucumbers, peeled & sliced 1/8"
- 2 tomatoes, cut into 8 wedges each
- 1/2 medium onion, (red) sliced thin
- 1 t. salt
- 2-3 T. sherry vinegar
- 6-7 T. olive oil
- Black pepper
