Ingredients
- 6 medium zucchini
- 1 medium onion, finely chopped
- 4 green onions, finely chopped
- 1 pound crumbled Feta cheese
- 6 beaten eggs
- 1/2 tablespoon salt
- 1/3 cup chopped fresh parsley
- 1/2 tablespoon mint
- 1 teaspoon dill
- Pepper
- 2 sticks melted butter
- 1/2 cup oil
- 1 pound Phyllo
Directions

Peel and shred zucchini

Squeeze to remove water

Add salt to zucchini

Add Feta to beaten eggs

Combine zucchini, onions, egg mixture, parsley, mint, dill and pepper in a large bowl

Mix well

Combine butter with oil
-
Grease a 12 × 18 baking pan

Line with 1/2 package of phyllo sheets, brushing each with butter

Work quickly
-
Spread zucchini mixture over phyllo,

Top with remaining phyllo brushing each sheet with butter

Cut the pieces into 2" squares and pour remaining butter on top

Bake in a preheated 350 degree oven for 45 minutes or until brown.

Can be served hot or cold. Serves 20
