Fish Plakee

Ingredients

  • 2 pounds sliced fish
  • Lemon wedge
  • 1/2 cup olive oil
  • 1 pound chopped tomatoes
  • 2 pounds chopped onions
  • 8 ounces white wine
  • 5 cloves garlic
  • 1 cup chopped parsley
  • salt and pepper

Directions

  1. Preheat oven to 350

  2. In a skillet, heat oil and onion

  3. Simmer until onion is golden brown, about 5 minutes

  4. Add tomatoes, wine, parsley and garlic.

  5. Simmer then add salt and pepper

  6. Salt the fish and douse with lemon juice

  7. Lay in a baking pan

  8. Top with remaining ingredients

  9. Add 1/2 cup water and bake for about 30 minutes
