Shrimp Pilafi

Serves 4 people

Ingredients

  • 1 small onion, chopped
  • 1/2 cup olive oil
  • 1 cup rice
  • 1 can medium shrimp (reserve liquid)
  • 1 can tomatoes, strained and put through sieve
  • 1 1/4 cup hot water
  • Salt and pepper
  • Parsley to taste
  • 8 oz tomato sauce

Directions

  1. In 3 quart saucepan, saute the onion in the oil over medium high heat

  2. Add rice and saute for 1 minute

  3. Add shrimp

  4. Add enough tomato and liquid from can to make 1 cup

  5. Add 1 1/4 cups hot water

  6. Add salt, pepper, parsley to shrimp, rice and tomatoes

  7. Stir

  8. Lower heat to low

  9. Cook for 20 minutes or until liquid is absorbed
