Ingredients
- 1 small onion, chopped
- 1/2 cup olive oil
- 1 cup rice
- 1 can medium shrimp (reserve liquid)
- 1 can tomatoes, strained and put through sieve
- 1 1/4 cup hot water
- Salt and pepper
- Parsley to taste
- 8 oz tomato sauce
Directions

In 3 quart saucepan, saute the onion in the oil over medium high heat

Add rice and saute for 1 minute

Add shrimp
-
Add enough tomato and liquid from can to make 1 cup

Add 1 1/4 cups hot water

Add salt, pepper, parsley to shrimp, rice and tomatoes

Stir

Lower heat to low
-
Cook for 20 minutes or until liquid is absorbed
