Pumpkin Cookies

Ingredients

  • 2 cups C&H dark brown sugar, packed
  • 2 cups canned pumpkin
  • 1 c salad oil
  • 2 tsp vanilla
  • 4 cups all-purpose flour
  • 2 tsp soda
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp ginger
  • 2 cups raisins
  • 1 cup chopped nuts

Directions

  1. In mixing bowl beat together sugar, pumpkin, oil, and vanilla. Combine dry ingredients; add ans stir until smooth. Blend in raisins and nuts. Drop by spoonfuls on lightly greased cookie sheet. Bake at 350 for 12-15 minutes. Makes about 7 dozen cookies.
