Potatoes Au Gratin

Ingredients

  • 4 Tbsp butter
  • 1/2 c gold medal flour
  • 2 c milk
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp dry mustard
  • 3 c cold boiled potatoes cut in small cubes
  • 3/4 c grated New York cheese
  • Paprika

Directions

  1. Make a thick white sauce by melting the butter, adding the flour, stirring in the milk and cooking for 10 minutes

  2. Add salt, pepper, and mustard.

  3. Add the potatoes and 1/2 cup of the grated cheese to this sauce and stir lightly with a fork.

  4. Place in a shallow 8×12 buttered baking dish.

  5. Sprinkle with paprika and the remaining 1/4 cup of grated cheese, and bake at 350 for 20 minutes.
