Potatoes Au Gratin

Ingredients
- 4 Tbsp butter
- 1/2 c gold medal flour
- 2 c milk
- 1 tsp salt
- 1/4 tsp pepper
- 1 tsp dry mustard
- 3 c cold boiled potatoes cut in small cubes
- 3/4 c grated New York cheese
- Paprika
Directions

Make a thick white sauce by melting the butter, adding the flour, stirring in the milk and cooking for 10 minutes

Add salt, pepper, and mustard.

Add the potatoes and 1/2 cup of the grated cheese to this sauce and stir lightly with a fork.

Place in a shallow 8×12 buttered baking dish.

Sprinkle with paprika and the remaining 1/4 cup of grated cheese, and bake at 350 for 20 minutes.
