Vegetable Meatloaf

Can use panko for breadcrumbs.
Can leave egg out.

Serves 6 people

Ingredients
- 1 lb. ground beef
- 1 cup soft breadcrumbs
- 1/4 cup shredded carrot
- 1/4 cup thinly sliced celery
- 2 tbsp. finely chopped onion
- 2 tbsp. finely chopped green pepper
- 1 egg, slightly beaten
- 1 tsp. parsley flakes
- 1/2 tsp. dry mustard
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1-16oz can, whole tomato's, drained and chopped
Directions

Combine all ingredients.

Place meat in a 10 × 6 inch loaf pan.

Bake at 350 degrees for 1 hour and 10 minutes or until done.
