Banana Oat Pancakes

Variation: Use 1/4 cup +2 tablespoons of wheat berries instead of the flour. Grind berries in Vitamix dry blade container for 1 minute on High prior to using in recipe.

Ingredients
- 1/2 cup (80 g) rolled oats
- 1 3/4 cup (188 g) unbleached flour
- 2 tablespoons (30 g) baking powder
- 1 1/2 cups (360 ml) 2%, skim, soy milk
- 1 teaspoon vanilla extract
- 2 bananas, peeled, in chunks
Directions

Place all ingredients, except bananas, into the Vitamix container in the order listed and secure lid.

machine on and slowly increase speed to Variable 4 or 5.

Blend for 10 seconds.

Reduce speed to Variable 2 and remove the lid plug.

Add bananas through the lid plug opening. Replace lid plug.

Blend for 5-10 seconds until mixed.

Note: Pour 1/4 cup (60 ml) batter onto hot, prepared griddle and bake.
