Sweet Corn & Veggie Salad/Dip

Serves 8 people
Ingredients
- 1 can black eyed peas, drained
- 1-2 cans shoe peg corn, drained
- 1 medium jar chopped pimentos, drained
- 1 large red or orange bell pepper, chopped
- 1 medium onion, chopped
- Marinade:
- 3/4 cup sugar
- 1/2 cup apple cider vinegar
- 1/2 cup vegetable oil
- 2 Tablespoons Tiger sauce
- Salt & pepper to taste
Directions

Mix all veggies in a large dish with a cover.

Combine marinade ingredients.

Pour marinade ingredients over veggies and mix well.

Cover and refrigerate for at least an hour to overnight.

Serve as a salad or with tortilla chips as a dip.
