Sweet Corn & Veggie Salad/Dip

Ingredients

  • 1 can black eyed peas, drained
  • 1-2 cans shoe peg corn, drained
  • 1 medium jar chopped pimentos, drained
  • 1 large red or orange bell pepper, chopped
  • 1 medium onion, chopped
  • Marinade:
  • 3/4 cup sugar
  • 1/2 cup apple cider vinegar
  • 1/2 cup vegetable oil
  • 2 Tablespoons Tiger sauce
  • Salt & pepper to taste

Directions

  1. Mix all veggies in a large dish with a cover.

  2. Combine marinade ingredients.

  3. Pour marinade ingredients over veggies and mix well.

  4. Cover and refrigerate for at least an hour to overnight.

  5. Serve as a salad or with tortilla chips as a dip.
