My Homemade Pizza Dough

(from NightfallPA’s recipe box)

The original recipe makes two medium pizzas. This makes one large pizza, enough for the three of us.

Ingredients

  • 1 cup very warm water
  • 2 teaspoons yeast
  • 2 teaspoons sugar
  • 2 cups)bread flour
  • 1/2 cup semolina flour
  • 1 teaspoon salt
  • dried basil (optional)
  • garlic powder (optional)

Directions

  1. Combine yeast and sugar with warm water in the bowl of a mixer or food processor (or by itself if you plan to knead by hand) and let rest for a minute.

  2. Add salt and both types of flour. Try not to skip the semolina flour, it gives the crust a very nice chewiness.

  3. Optional: add dried basil and garlic powder directly to the dough. Gives the dough itself a wonderful flavor.

  4. Mix with either a dough hook, in the processor or by hand, adding flour if it’s too sticky or a tablespoon of water if too dry. Dough should be smooth and elastic when done. Knead for a few minutes.

  5. Let dough rise, covered, for one hour.

  6. To make your pizza, preheat oven to 500 degrees. Roll out your dough with a little extra flour to keep from sticking. Put on your pan and then add toppings as you like. Base for 12 minutes.
