Buttermilk Mashed Potatoes

Serves 4 people

Ingredients

  • 4 medium baking potatoes , peeled and cut into 2 inch chunks
  • 3 tablespoons butter, softened
  • 1/2 cup buttermilk
  • coarse salt and freshly ground pepper, to taste

Directions

  1. 1 Cook the potatoes in a pot of boiling water until they are very soft, 15 to 20 minutes.

  2. 2 Drain in a colander and return to the pan. Using a hand masher or mixer, mash potatoes.

  3. 3 Add butter and mix until melted and smooth. Mix in buttermilk. If potatoes are still too thick, add more buttermilk, 1 tablespoon at a time, until they are of the desired consistency. Season generously with salt and pepper.
